Campus eateries offer fresh, green and local cuisine
All the colours of the rainbow. Campus eateries such as Centro @ Commons (pictured), La Piazza, East Meets West Bistro and Bridges Cafe offer healthy and creative meals to suit everyone's tastes and dietary needs.
Would you like fries with that? How about a side of raw kale, chickpeas and zucchini?
Food culture on campus sure has changed a lot in recent years.
These days, McMaster eateries are committed to offering a wide selection of fresh, colourful and locally-sourced menu items to an increasingly diverse campus community — from vegetarian and vegan cuisine to fresh sushi, seafood, gourmet pizza and hamburgers, Halal meats, wholewheat pasta and salad bars with dozens of nutritious items.
Some may even call it the “Fresh 15,” a revolution in campus cuisine that places quality over quantity.
“Students are definitely a lot more conscious of what they’re eating, and exactly what goes into their food,” says Leigh Laidlaw, chef manager at Bridges Cafe, McMaster’s vegetarian and vegan restaurant. “They like to have nice diverse options as well. No longer is it just, ‘give me the fried stuff and I’ll be happy.’ They want a variety, they’re entitled to it and we’re happy to make it for them.”
